Omni perfect balanced for espresso and filter extractions

Guatemala produces some of the most versatile coffees we ever tasted. It doesn’t get as much praise for being such a people pleaser as some other coffees that make you fall in love and obsess over them. But it combines great with milk, produces a balanced espresso and a sweet bright filter, it is a comfort coffee.

Antonio and his wife, Eby Aracely Samayoa, have worked hard to fine-tune their processing practices in order to have the best possible product. Their dedication has helped take their coffee quality to the next level, and the results are in the cup!  Aracely’s coffees are processed with utmost care and attention to detail at his mill, which is at 1200 meters - a bit lower than the farm where the plants grow, which means stronger sun and warmer days that are perfect for drying naturals. Only the ripest red cherries are selected for this lot, and once the cherries are picked they are placed in clean, sealed plastic bags in the shade. 

This lot is special because, after many years of working with Antonio and Aracely as a couple, Primavera Green Coffee bought this lot knowing it is specifically Aracely’s coffee - the result of the hard work of this outstanding woman!
