David Guevara is a second-generation coffee farmer who owns land in La Libertad, La Coipa. He cultivates 3 hectares dedicated to coffee production, growing Caturra, Castillo, Catuai, and Geisha varieties. David’s farms are ideally situated for producing high-quality coffee, thanks to the region's high humidity, altitude, and rich, fertile soils.
David hires seasonal workers to assist with coffee picking, but he and his family also contribute significantly to the harvest—especially this year, due to a notable shortage of seasonal workers in the region. After picking, David and his family wash the coffee cherries in fresh water before depulping and fermenting them overnight.
Once fermentation is complete—typically 12 to 24 hours, depending on the weather—the coffee is rinsed and placed on drying beds for skin drying. Afterward, the coffee is transferred to a lined patio, where it dries for an additional week to 10 days.
