Lombardia has been part of the Ruffatti proprieties since 1970. The Finca is in a middle elevation area always surrounded by lots of other farms since the profit from coffee decreased dramatically and most of the properties have been abandoned. At that point all coffee and shade trees from these farms have been cut down and sold or used for domestic uses and lands have been burnt to create corn plantations. This kind of farming is creating desertification all around the area and Lombardia is the last remaining forest there and this is why it’s a great challenge to keep producing here good quality affordable coffee but processed exactly as a specialty one. Furthermore, Rodolfo is now diversifying the varieties inside the farm to increase biodiversity instead of counting just on coffee plants.
The lots from this farm are picked and processed by the Productor Team ensuring high quality. They were aiming for a full-body, chocosweet / choco-nut taste profile. In order to achieve this, this lot has been processed part as natural, part as honey, and part as cherry maceration
and blended once the coffee was dried.
