Description

This lot comes from Cooperativa de Colis that unites farmers around the town of Mataquescuintla. The coffees are picked by the respective producer members of the cooperative. They are all collected in cherry and driven for 1 – 2 hours to Finca El Hato where they are processed. The coffees are depulped and fermented for 24 hours and then washed. They are dried by the sun on patios for 5 – 7 days.
